Supervised by Mariko Oishi, a culinary researcher living in the UK. House-made cordials, carefully prepared mainly from Japanese ingredients — found only at Cafe Madoroom.
What is a cordial?
A cordial is a traditional British concentrated syrup, made by simmering fruit or herbs with sugar. Topped up with water or soda, it lets you taste its ingredients just as they are.
The cordials Oishi makes from Japanese ingredients bring together respect for British food culture and the richness of Japan’s own climate and land.

The scent of the season, straight into the glass.
Two flavors from Japanese ingredients
Lemon Squash with Shiso(和の薫るレモンスカッシュ)is a cordial of Japanese lemon and green shiso, topped up with soda. The coolness of shiso melts into the lemon’s acidity, and a scent spreads that is somehow nostalgic, yet new.
Grown-up Ginger Ale(大人のジンジャーエール)is a house-made cordial with a strong hit of ginger, topped up with soda. Unlike bottled ginger ale, the heat of the ginger lives alongside its warmth — a glass for grown-ups.
Lemonade with Shiso(和の薫るレモネード)is the same cordial topped up with still water: soft and calm on the palate. It keeps company with a slow afternoon.
